The Restaurant at Prairie Dell Opens March 27

Learning by doing. It’s the approach East Central College Culinary Arts Instructor Mike Palazzola uses with students every day.

“Last year, there was something missing from our culinary classrooms,” Palazzola said, “We needed real life experiences in real time.”

The award-winning chef, along with former culinary instructor Ted Hirschi, came up with a solution – The Restaurant at Prairie Dell. Managed by the East Central College Culinary Arts Program, the limited-run restaurant gave students hands-on experience at running an establishment of their own.

“Students were responsible for scheduling, production, staff management and the handling of revenue,” Palazzola explained. “It was a great opportunity for them to learn processes and standards they will encounter in the hospitality industry.”

“It was an eye-opening experience,” said student Emily Goree. “You got to see your own culinary concepts come to life, in and out of the kitchen. It made all the hard work worth it.”

On March 27, it will open its doors once again to the public. The Restaurant at Prairie Dell will be open Tuesdays, Wednesdays and Thursdays until April 26. Reservations are required and can be made through michael.palazzola@eastcentral.edu.  Seating starts at 11 a.m. and goes in 15 minute intervals until noon.

New this year, along with cash and check, patrons can pay using a credit card.

“Our menu has something for everyone,” said Palazzola, “and our prices are meant to only cover the cost of the food. It’s the cheapest gourmet meal you’ll ever have!”

The Restaurant at Prairie Dell is located at the East Central College Training Center, 1964 Prairie Dell Road in Union.

East Central College Kicks Off 50th Anniversary in April!

East Central College is excited to begin its 50th Anniversary celebration in 2018!

On April 2, 1968, voters approved the establishment of the Junior College District of East Central Missouri. To help mark the occasion, we are holding several events the week of April 2 – 5.

As we celebrate the 50th Anniversary, we hope to share memories from the thousands of alumni who have made East Central College such a special place over the years. We are asking the community to share their memories, upload photos and tell us how East Central College changed their lives. We will upload these stories to the website and on social media using #ECC50.

Philanthropy and giving back to the community is also a big part of the 50th Anniversary celebration. The 50 Acts of Kindness campaign will help provide students, faculty, staff and alumni the opportunity to become active members of their community and have a lasting, positive impact on society at large.

East Central College is proud to continue our mission as a dynamic entity within the local region, offering excellent educational opportunities and program partnerships between the College, other educational organizations and local business and industry.


Strengthening Data-Driven Decision Making

Coordinating assessment, accreditation, institutional research and planning is the mission of the new Executive Director of Institutional Effectiveness. The position was approved by the Board of Trustees at the March 5 meeting, and the college will look to fill the position in the coming weeks.

“Overall institutional effectiveness involves planning for the college’s desired strategies,” said East Central College President Dr. Jon Bauer. “This person will help carry out those plans, establish measures to determine whether those actions are working and analyze data to continue improvement of the college.”

The position was one of the top recommendations of ECC’s Higher Learning Commission Task Force, in response to the college’s Comprehensive Quality Review.

“Our institutional and programmatic accreditors expect to see the institution working in a continuous quality improvement framework,” said Dr. Bauer. “This position supports that mission.”

According to a study by the Association for Higher Education Effectiveness, more colleges across the country are creating similar positions. In 1995, only 43 positions existed. The number jumped to 501 positions in 2015, an increase of more than 1000 percent.

“The ability to measure and demonstrate our effectiveness – institutionally and programmatically – is critically important to the college,” said Dr. Bauer.


State Education Funding to Determine Possible Tuition Increase at ECC

Possible tuition increases for the 2018-2019 academic year were put on hold at the March 5 Board of Trustees meeting, as state education funding is debated in Jefferson City.

“There have been positive developments with the state budget,” said East Central College President Dr. Jon Bauer. “We are very hopeful we won’t see a decrease in higher education funding.”

According to the Associated Press, Governor Eric Greitens has proposed giving higher education institutions $92 million less than originally budgeted for the 2018-2019 fiscal year, including a reduction of nearly $450,000 at East Central College.

“Legislators in the College service area have said they hope to reduce the cuts,” said Dr. Bauer. “It’s possible we will even receive the same amount of funding as last year.”

If state education funding remains stable, tuition increases will not be needed.

“Tuition has to be set before March 26, the first day of current student registration for the 2018-2019 academic year,” said Dr. Bauer. “If state funding cuts are made in Jefferson City, the College will need to call a special Board of Trustees meeting to discuss tuition increases.”

Historically, East Central College offers one of the lowest tuitions among community colleges in the state.


#InspiringExcellence: How a Love for Photography Led to a Career in Culinary Arts

For Bailey Kirkland, a love for photography led to a career in culinary arts. She hadn’t planned it that way.

Originally from Alaska, Kirkland moved to Union in 2012. Her plan was to finish her online photography degree and eventually move back to her hometown to open a photography studio.

“Things changed,” she admitted. “For the better.”

After her move to Franklin County, she started a food blog online. She featured recipes she cooked for her significant other. “Before starting the blog, I had absolutely no previous experience with cooking,” she explained, “not even in my kitchen growing up!”

In 2014, Kirkland finished her degree in photography, but she decided she wasn’t done with higher education. She enrolled in the Culinary Arts Program at East Central College in the fall.

“My plan was to learn how to create stunning food,” she said. “That way, I wouldn’t have to pay someone for food styling when I began taking photographs of food for websites.”

Once again, things changed. While she still loved photography, she found a new passion – culinary competitions.

“The fear I experienced through competing pushed me to do better and continue to better myself as a person, not only in the way of culinary arts,” she said. “I was hungry for knowledge. I wanted to know where our food came from, how much it cost and what happens when you prepare it differently.”

After graduating with an Associate of Applied Science in Culinary Arts in 2016, Kirkland was hired at the Farm To You Market in Washington.

“I found purpose at Farm To You Market,” she said. “Getting my degree, I spent significant time learning how to craft a business plan, manage a kitchen and balance budgets. Those skills helped me get promoted from kitchen staff to Executive Chef and Manager of Barnyard Café.”

Though the eatery was in its infancy when she took over, Kirkland saw its potential for growth.

“When I first started, it was essentially a deli counter,” she explained. “We now serve breakfast, lunch and farm-to-table dinners.”

Kirkland is now helping spearhead an event that will put East Central College Culinary Arts students into the spotlight. On Thursday, March 8 from 4:30 – 7:30 p.m., Farm To You Market will host a free sampling event for the community.

“It’s an opportunity to meet the local farmers and producers who sell items at the market,” Kirkland said. “This year, we are also donating free product for the East Central College students to create something unique that will be offered for sampling. They will have the opportunity to experience using quality, locally-sourced products and really show off what they can do.”

Part of Farm To You Market’s mission, Kirkland believes, is to support and educate the next generation and make sure that there is a continued appreciation for where food comes from.

“As a prior ECC culinary student, I can say it is fantastic knowing the program is supported by local small businesses,” she said.

Kirkland also currently serves on the advisory board for the East Central College Culinary Arts Program.


AEL/Certified Nurse Assistant Program Now Enrolling Students

Get your High School Equivalency and become a Certified Nurse Assistant at the same time!

The East Central College Adult Education and Literacy (AEL) Program is teaming up with the Center for Workforce Development to offer a Certified Nurse Assistant (CNA) program in March. This program is designed to prepare individuals to care for clients in long-term care facilities, hospitals and home health agencies.

“Certified Nurse Assistants are vital to healthcare,” said East Central College instructor Terri Warmack. “It’s a rewarding, exciting and challenging career where you can make a difference every day.”

The course consists of 75 hours of classroom training and 100 hours of supervised clinical training. It also includes 100 hours preparation for the high school equivalency or college placement exams. Additionally, high school graduates who need to brush up on basic reading, language or math skills can take this course while becoming a Certified Nurse Assistant.

Upon completion of all components, students will be eligible to take the final exam to become a Certified Nurse Assistant through the Missouri Department of Health and Senior Services.

#InspiringExcellence – Bauer Receives National Recognition

East Central College President Dr. Jon Bauer was honored with the Shirley B. Gordon Award of Distinction by the Phi Theta Kappa (PTK) Honor Society in February. He was one of 35 recipients to receive the accolade nationwide.

“The Phi Theta Kappa chapter at East Central College congratulates Dr. Bauer on this honor and thanks him for the support and dedication he has given and continues to give every semester,” said ECC instructor and Phi Theta Kappa advisor Kevin Dixon.

Each year, Phi Theta Kappa recognizes college presidents who have demonstrated outstanding effort toward promoting the goals of the organization. The award is named in honor of the late Dr. Shirley B. Gordon, longtime chair of the PTK Board of Directors and president emeritus of Highline College.

“I am proud to support Phi Theta Kappa’s mission. They are a very important part of East Central College’s campus culture,” said Dr. Bauer. “I was actually inducted to PTK when I was a community college student, so this award is especially meaningful.”

Phi Theta Kappa is the premier honor society recognizing the academic achievement of students at associate degree-granting colleges and helping them to grow as scholars and leaders. The Society is made up of more than 3.5 million members and nearly 1,300 chapters in nine nations.

Nominate an Outstanding Alumni!

The East Central College Alumni Association established the Outstanding Alumni Award in 2002. Since that time, it has set out to recognize alumni who have set an example for ECC graduates by using their college education and serving their community.

To be considered for the Outstanding Alumni Award, nominees must have completed a college credit course at ECC at some point in their educational journey.  Attainment of a degree or certificate from ECC is preferred but not required.  Nominees must also be looked upon by their peers as leaders in their field, with a demonstrated commitment to community.   Residency within the college district is not required.  An explanation of 500 words or less as to why the person is worthy of consideration should accompany the nomination.

Nominate someone who is making a difference in the community today!

Selection will be determined by a committee drawn from ECC alumni and the Foundation.  Nominations will be accepted through March 31. The 2018 award will be presented at the East Central College commencement ceremony on the Union campus Saturday, May 12.
